History
A "castro" is a fortified settlement from the Roman and pre-Roman periods of the Iberian Peninsula. The occupation of Castro de Chibanes dates back to the Copper and Early Bronze Ages. Located at the top of the Serra do Louro, in Palmela, and within the Arrábida Natural Park, the site offers views over the Tagus and Sado estuaries, as well as the entire Barris Valley. The natural defensive advantages of the Chibanes site were enhanced by the construction of fortifications during prehistoric times, and later by a complex structure with walls, towers, and bastions during the Iron Ages II and III. Castro de Chibanes Red was born from the idea of sharing and promoting the archaeological heritage of the region.
Wine Pairing
An ideal wine to accompany dishes with meats, game, or rich cheeses — either soft and creamy or intensely aged. Excellent when paired with Portuguese stew or feijoada. It also pairs well with black pork, wild boar, chorizo, and matured meat dishes such as grilled tomahawk or lamb stew. A great option for full-bodied vegetarian dishes as well, like vegetarian alheira or wild mushroom recipes featuring Portobello or Shiitake.
Winemaker Notes
It displays a deep, evolved tawny hue, a reflection of its four years of aging. On the nose and palate, it reveals remarkable complexity that unfolds gradually with aeration. This wine offers intense aromas of ripe wild black fruits, spices such as cocoa and coffee, and a hint of eucalyptus. Smoky notes are clearly marked by the influence of the wood. It is an elegant, fullbodied wine with a long, persistent finish. A timeless wine that evokes winter evenings by the fireplace, awakening a sense of comfort and gastronomic harmony.
